Recipes / Rosemary Pecan Oil Sweet Potatoes

2-3 large sweet potatoes ***

3-4 tbsp. Pecan Oil ***

Salt & Pepper to taste

2 Sprigs fresh Rosemary (remove from stem)

Balsamic Vinegar ***

Heat oven to 400 degrees.  Peel and cut sweet potatoes into 1 inch pieces.  Place on sheet pan in single layer.  Add rest of ingredients and toss to fully coat, spread into single layer.  Bake for 20-30 minutes, stir around about half way through cook time.  Serve naked or dress with a drizzle of Balsamic vinegar.
