1 Deep Dish Pie Crust
2 1/2 cups mashed Sweet Potatoes ***
1 cup sugar
2 Eggs, beaten
1/2 cup unsalted butter, melted
1 1/2 tsp vanilla ***
1/2 evaporated milk
2 Tbsp. Maple Syrup
1/4 cup brown sugar
2 Tbsps unsalted butter, melted
1/4 tsp cinnamon
3/4 cup chopped pecans ***
1. Heat oven to 400 degrees. Pre-bake crust until almost done. Reduce oven to 350 degrees.
2. While crust is pre-baking, in medium size bowl, stir all ingredients together except syrup, add it last.
3. Bake for 40 minutes, then combine Streusel Topping and carefully sprinkle on top of pie. Continue to cook for 15-20 minutes until topping is golden brown.
4. Let Cool completely
